Ingredients

  • 1.5oz Bulleit Rye
  • 0.5oz Sweet Vermouth
  • 0.5oz Lustau East India Sherry
  • 0.25oz Giffard Banane
  • 2 dashes Mole Bitters

Garnish

  • Banana Leaf + Bruleed Sababa Banana or Plantain

Equipment

  • Double Rocks glass

Instructions

  • Jigger all ingredients into a mixing glass and ice
  • Stir until cold, Strain over a big rock into a double rocks glass
  • Garnish with a banana leaf and bruleed banana or plantain.

BBQ Pork Skewers


Ingredients

  • 6 in BBQ wood skewers
  • 1 cup Filipino BBQ sauce
  • 1/3 cup banana ketchup
  • 1 lemon
  • 1 cup oil (for grilling/searing)
  • 2 stalks green onions (optional for garnish)
  • 1 large Cucumber
  • 2 cloves Garlic, smashed
  • 1 tsp Salt
  • 1/4 Onion, small diced
  • 1 cup sugar
  • 1/2 cup water
  • 1 1/2 cup rice wine vinegar

Instructions

  • Cut pork belly into 1 inch cubes
  • Marinate pork belly, set in fridge for 6-12 hours
  • Cut cucumber in half long ways, cut in half moons then massage it with the garlic and salt
  • Heat the water and vinegar, dissolve the sugar and pour over the cucumbers and garlic
  • After pork is done marinating, skewer about 4-5 pieces on each stick
  • Set oven to 350 degrees
  • Lightly oil grill/saute pan and sear each piece and put in oven for about 30 minutes or until tender.
  • Serve with pickled cucumbers.
